Add the mushrooms and the flour and fry for a few seconds, giving the sauce a stir every now and then. Pour the sauce in a bowl and stir in the stock. Season with salt, pepper and olive oil. Heat the sauce to the boiling point in the pan and stir in the spinach. Cover and simmer until the spinach is soft but crisp, stirring every now and then, for a further 30 seconds or so. (If you like a more substantial, slightly more bitter sauce, add the crushed chillies and red chilli pepper in the last five minutes of cooking.)

When ready to serve, serve the soup with the sauce – either spooned over the top or spooned over the bottom of a bowl. Garnish with the spinach and breadcrumbs and serve right away, or to go with a good vegetarian meal.

Remove the aubergine slices from the colander with a slotted spoon and place in a colander set over a pan of warm water. Using a slotted spoon, lift the aubergine out of the liquid and rinse in cold water to drain off excess liquid. Cut the aubergine lengthways into 3-inch thick slices.

Place the aubergine slices in a large skillet and cook for 1½ to 2 minutes, until the slices begin to brown. Add the cilantro, garlic, chili powder, and salt and pepper to taste. Add the aubergine slices to the bowl with the tomatoes and sauce.

In a small bowl toss the pasta with 1/2 cup pasta cooking water until the pasta is fully tender.

Combine the cooked pasta, cream, milk, and lemon juice. Tear the sauce into 3-inch pieces.
